'FolioStudioCanyon was birthed from a simple vision: to share the true Neapolitan pizza with Via della Scala, 35. Established by the Rossi lineage in 1985, our pizza place originated as a quaint, family-operated locale boasting recipes passed down for generations.

Marco Rossi, our progenitor, honed her pizza craft while exploring Italy, apprenticing with renowned pizza chefs in Naples—the cradle of pizza. After returning to the UK, her aim was to bring the essence of authentic Italian pizza to life, upholding traditional methods and selecting only the finest of ingredients.

Our journey began with a humble 12-seat eatery and has since evolved into a cherished community gem, yet our dedication to uncompromised quality and genuineness stands firm. We still utilize traditional wood-fired ovens, lovingly prepare our dough daily, and choose top-tier ingredients.

Through the years, 'FolioStudioCanyon has remained under family governance, today embraced by the second generation of the Rossi clan, guiding our zealous crew. Though we've incorporated modern touches, our core mission is unwavering: crafting scrumptious, traditional pizza that unites people.
